Central Ninth Espresso
Countries: Brazil, Guatemala, & Ethiopia
Processing: Pulped Natural, Fully Washed, & Natural
A nod to our beloved little corner of the city, Central Ninth is a little sweet, a little dangerous, and full of character. Just like the stunning desert sunsets we get to see every day from our Roastery window, this espresso is a gradient of color: an array of red fruits, rich caramelized nuts, and a sweet dark chocolate finish.
Brazilian and Guatemalan coffees lay a foundation of toffee-coated peanut and chocolate that pairs deliciously with milk. A natural-processed Ethiopian provides sparkling fruit notes and a resonant acidity that makes C9 a force to be reckoned with both on its own or in lattes and mochas.
PREPARATION RECOMMENDATIONS: Central 9th is designed for espresso, and excels when extracted manually. We like dosing our portafilters with 18 - 20 grams of finely-ground coffee, and pulling shots for between 25 and 35 seconds. This is intended to yield 1 to 1.5 ounces of espresso.
