100% Typica honey-processed lot from Hacienda Sonora in Costa Rica. The Hacienda is located at the base of the Poas Volcano in the Alajuela region of the Central Valley. 35% of the 100 hectare farm is a nature preserve. The coffee is shade grown in a richly diverse environment that also provides refuge to countless birds and animals. All of Sonora’s coffee is milled in on site in an old repurposed sugar cane mill.
We picked up notes of malted grain, brown sugar and hints of red fruit in the coffee’s aroma. The fruit evolves into faintly sweet red cherry in the cup. Pleasant notes of caramelized sugar and crusty bread complement the coffee’s mellow acidity and sweetly drying finish.
