  • About this Coffee: Andres Cardona has worked in coffee since the age of 12. He is one of the producers working at Felipe Trujillo’s farm and leading the Unblended Ventola Institute Program. Felipe shares his passion for coffee processing-designing and teaches young farmers the art and science of coffee processing. Producers who participate in the UVI program gain better access into the US market, explore fermentation processes, develop accounting & financing skills, and develop sales strategies. Andres currently manages his uncle's farm, Villa Lucia. His dedication and curiosity have taken him to new coffee processes and experiments, always seeking new ways of making each coffee a special one. For this coffee, Andres used a processing method known as "Cochadas" , which means small batches. During the harvest, small amounts of cherries are picked throughout the week. He begins fermenting some of the cherries and then adds more day by day until the fermentation vessels run out of space. This process takes about five days. The cherries are at different stages of the fermentation process, some for a few days and some for a few hours. This unique processing style produces clean and crisp flavors of peach, nougat, and star fruit.
