About this Coffee:Continuing a family tradition initiated by their father in the 1940s, the Aguilar brothers, led by Felipe and Erasmo, manage the majority of the mill's activities alongside their ten brothers and sisters.
This lot of coffee came from Finca Chayote, one of the seven farms under the Aguilars' management. The family employs around 40 - 100 pickers and rehires these same workers each harvest season.The Aguilars take a unique approach to paying the pickers. Given the remote locations of certain farm areas, harvesting the ripest cherries is more challenging. As a solution, they offer a higher compensation for green cherries compared to fully ripe red cherries. This strategy aims to ensure pickers earn a more substantial wage.
Costa Rica has gained fame for its honey-processed coffees. Generally, harvested coffee is sorted, depulped to remove only the skin, and then dried on patios or raised beds.
In the cup, we experience notes of pistachio, red grape, and manuka honey.
Our roastery is 100% powered by 65 solar panels with an oxidizer that filters out 96% of the particulates from the roasting process, making us one of the greenest coffee roasteries in the USA.
