About this Coffee:Wilson Antonio Rimacuna Gaona owns and operates Finca Sirichal. Located in the town of El Ingenio in Ecuador's Loja region, this farm represents an ideal environment for cultivating coffee. Finca Sirichal faces the east into the morning sun, where the mornings are often misty and warm.
Once the cherries are harvested, they are brought to the wet mill, where they are depulped and set to ferment-dry for a period of 24 hours. This is a variation on the washed processing method, where depulped coffee cherries are fermented in water. After this, the coffee is washed multiple times with clean, cold water then placed on raised beds under a solar dryer for an average period of 10 days until the coffee is properly dried.
The results in the cup are bursting with juicy and tart cherry, the body is syrupy, while in the finish leaves the palate with a sweet pastry-like scent.
Our roastery is 100% powered by 65 solar panels with an oxidizer that filters out 96% of the particulates from the roasting process, making us one of the greenest coffee roasteries in the USA.
