General Information
What is Publik Coffee?
Publik Coffee is a small batch specialty coffee roaster based in Salt Lake City, Utah, founded by Missy Greis. We roast all of our coffee in-house at our solar-powered roastery and serve it across four locations in SLC: Publik Kitchen (a full-service breakfast and lunch restaurant), Publik Coffee Downtown on West Temple (our largest cafe), Publik Coffee Avenues (a cozy neighborhood shop), and Publik Ed's (a casual cafe near the University of Utah). We also operate Publik Space, a unique event venue inside our working roastery.
Who owns Publik Coffee?
Publik Coffee was founded by Missy Greis, a Salt Lake City entrepreneur who started the company with no prior experience in the coffee industry — driven by curiosity, community, and a commitment to sustainability. Her guiding philosophy for Publik is “Quality over Quantity, Community over Corporate, Planet over Profit.” Under her leadership, Publik has grown from a single roastery on West Temple to four locations across Salt Lake City, earned recognition from Food & Wine, Utah Business, and Daily Coffee News, and built Utah’s only solar-powered coffee roastery. Missy has been featured in SLUG Magazine, AGEIST, the HEAL Utah Podcast, the Small Lake City Podcast, and City Home Collective.

Coffee & Roasting

What makes Publik Coffee’s roasting different?
Publik operates Utah’s only solar-powered coffee roastery. Our facility is powered by 65 solar panels and uses 96% particulate filtration. We roast in small batches to order — our coffee is never sitting in a warehouse for months. This means fresher, more flavorful coffee with a smaller environmental footprint.
Is Publik Coffee sustainable?
Sustainability is central to how we operate. Our roastery is 100% solar-powered — the only solar-powered coffee roastery in Utah. We roast in small batches to reduce waste, source from producers we have direct relationships with, and prioritize environmentally responsible practices across our operations.

We serve specialty-grade coffee roasted in-house. Our menu includes espresso drinks (lattes, cappuccinos, cortados, americanos), pour-over coffee brewed to order from single-origin beans, batch-brewed drip coffee that rotates daily, cold brew, and seasonal specialty lattes made with our house-made syrups.
