Aquiares Estate, nestled in the fertile volcanic slopes of Turrialba, Costa Rica. Under the direction of Diego Robelo, the farm has become a leader in innovation, balancing exceptional coffee cultivation with profound social and environmental operation. Spanning over 924 hectares, Aquiares is not just a farm but a thriving community where workers and their families live on-site, a model that ensures fair wages, housing, and healthcare.
This coffee is a shining example of Aquiares’ commitment to experimental processing. The coffee is derived from the Mariana variety. What sets this lot apart is the meticulous Anaerobic Natural process. After harvest, the intact cherries are placed into sealed, oxygen-deprived tanks to ferment. This controlled, anoxic environment dramatically slows the fermentation, allowing highly complex, often wine-like and fruit-forward flavor compounds to develop that would not be possible in traditional aerobic processing. Following the anaerobic stage, the cherries are dried whole, still encased in their fruit. This labor-intensive process results in a coffee with exceptional clarity, intensity, and a distinctly modern profile.
